White Peach Mojito

This White Peach Mojito is a twist on a classic. Made with fresh sweet peach, lemon and mint. Perfect for summer!

If you may have noticed, I have been posting a few more cocktail or drink recipes this year. You are absolutely correct! It is all thanks to our bar cabinet.

Before we moved, our place was tiny (425 square feet). Don’t talk about liquor bottles. We barely have enough space to store all my pots, pans, kitchen tools and gadgets. At the most, we had a bottle of gin (Bryan’s favorite) and a bottle of golden rum (to make tiramisu). That was it, our old “bar”.

When we were shopping for furniture for our condo, we were both certain that we needed a bar cabinet. It was one of the best decisions ever! Once you start building your bar, you realize that there are so many things you need and want. White rum, golden rum, vodka, whiskey, Japanese whiskey, gins, tequila, shochu, mixer… The list keeps growing and growing.

Then I realize Bryan is obsessed with glassware. When we go to Crate and Barrel, I would be walking all around and looking at different things. But Bryan? He is always in the glassware section. He likes the short one, tall one, fat one… Pretty much any one. If he could, he would bring them all home. Lucky that our cabinet provides a good amount of spaces for glassware. But I can tell you that they are all filled now. I hope Bryan is not buying any more.

But yeah, because of the bar cabinet, we are able to expand our bar and have easy access to the liquor. That is the reason why I have been able to make more drinks and share more drink recipes.

Now, who is ready for a cocktail?

White Peach Mojito 5 | The Missing Lokness

Peaches are at their best right now. Whenever I walk by them in the grocery store, I couldn’t walk away. I must return to either grab a few or breathe in all that sweet fragrant. This cocktail is a great way to celebrate peaches. As Bryan said, this cocktail is peachy. The flavors of the sweet white peach came through strongly. With the fresh mint and lemon juice, the drink is refreshing and aromatic. It would make a great party cocktail or a nice drink for yourself to enjoy the rest of the summer.

White Peach Mojito

Ingredients

  • 4 mint leaves, plus extra for garnish
  • ¾ ripe white peach (cut into cubes)
  • 1½ tablespoons simple syrup
  • 2 tablespoons fresh lemon juice
  • 1½ ounces white rum
  • 6 ice cubes
  • ½ cup club soda

Simple Syrup:

  • ¼ cup sugar
  • ¼ cup water

Instructions

  • To make simple syrup, in a small pot, add sugar and water. Cook over medium heat until the sugar has dissolved. Remove from heat and cool to room temperature. Transfer to an airtight container and store in the fridge for up to 1 week.
  • In a serving glass, crush the mint leaves with a muddler.
  • In a blender, blend the peaches until smooth. Pour the puree into the serving glass. Add simple syrup, lemon juice and white rum. Add ice and soda. Stir to mix. Garnish with extra mint leaves. Serve immediately.

Notes

  1. You can use yellow peach, but you may want to adjust the sweetness, as yellow peach is slightly more tart.

    Ha! We got a bar cabinet from Crate and Barrel a couple of years ago, and our drinking increased for a time too. I just loved coming home after a long a day and pouring myself a drink – so Mad Men 😉

    I love this summery cocktail! It’s just in time for the weekend and my brother is visiting, so I’ll have to make some drinks to entertain. Hope you have a great weekend!

    That bar cabinet sounds fab (so grown up! ; ). And C&B does have an extensive glassware collection…I can see the appeal! Great job on this peach mojito…fun and very tasty, I know.

    We just got a bottle of white rum and I have some over ripen peach in my fridge. This is perfect drink to cook this evening!
    I totally share the experience of tight space. We haven’t got a bar cabinet yet, but we do have a booze corner at home. I really need to learn more drink recipes. We drunk wine too often and got lazy! lol

      You need a bar cabinet, Maggie! Great way to organize the booze bottles, bar accessories and glasses. Once everything is organized and easy to access, you will want to make more cocktails. 😉 Enjoy a great weekend!

We’re back at decorating Rose Parade floats this We’re back at decorating Rose Parade floats this year!🌹 Fluffing and gluing so many carnations for the Honda float. This time, we decided to come on a later date, & the vibe was totally different from last year. There were news crews, tons of volunteers, adorable rescue dogs (they’ll be on the Pasadena Humane float 🐾), & even Gayle King! Our legs & backs are aching right now, but honestly? I wouldn’t trade it for anything. Loved every minute of it! ❤️

I grew up eating them in Hong Kong. They’re very common in local bakeries. So simple, but taste the BEST! Have you had these before?

Yesterday, we went to Disneyland and Disney Califo Yesterday, we went to Disneyland and Disney California Adventure. Festive, & luckily, it wasn’t too crowded. I went in with a long list of foods to try, but by 4 PM, we were already stuffed! Here are some of our favorites:

1. Mickey Gingerbread - The most popular holiday treat! We’ve had this before & loved it just as much this time around. It’s soft & chewy with ginger and warm spices. And let’s be honest - they’re just way too cute! Quick tip: I placed a mobile-order through Jolly Holiday at 7am when the windows opened. Yes, I ordered it before arriving at Disneyland. It can sold out quickly, especially on a busy day. These can sell out fast, especially on busy days. You might find them at Market House too, but there’s no mobile ordering option there. 2. Waffle Cristo - A twist on the classic Monte Cristo. Ham, turkey, & Swiss cheese on crispy waffles. Adding a touch of strawberry jam & maple syrup made for an amazing sweet & savory combo. Definitely getting this again next time. (From Royal Street Veranda)
3. Mickey-Shaped Beignets - 1st time trying these. Light & fresh! (From Mint Julep Bar)
4. Lobster Nachos - The nachos were flavorful as always, though I wouldn’t have minded a bit more sauce this time. Fair warning: the jalapeños brought some serious heat!
5. 2319 - This fruity coconutty drink is non-alcoholic. So refreshing! Loved it! (From Lamplight Lounge in DCA)
6. Churro - Hot & fresh! Always a must! (From churro carts)
7. Cold Brew Black Caf - Tasty! It kind of reminds me of tiramisu. If you’re in Galaxy’s Edge area, definitely check it out. (From Docking Bay 7 Food and Cargo)
8. Dole Whip - No Disneyland trip is complete without this! I always go for the classic pineapple flavor. Tangy, refreshing, & never disappoints. (From The Tropical Hideaway)
