Waffles with Macerated Strawberries

Bryan and I like to have breakfast for dinner, so I am always trying to come up with new ideas for breakfast. Other than eggs and toasts, this waffle recipe is probably pretty easy and good. These waffles were light and crispy. They were not heavy at all. When top with macerated strawberries and whipped cream, they were simply amazing.

Waffles with Macerated Strawberries (Adapted from Annie’s Eats)

4 – 5 waffles (2 servings)

Ingredients:

–   ¾ cup all-purpose flour

–   ½ cup whole milk

–   ½ cup buttermilk

–   1/3 cup vegetable oil

–   ¼ cup cornstarch

–   1 large egg (lightly beaten)

–   2 teaspoons sugar

–   ¾ teaspoon vanilla extract

–   ½ teaspoon baking powder

–   ¼ teaspoon baking soda

–   ¼ teaspoon salt

Macerated Strawberries:

–   1 cup fresh strawberries (rinsed, hulled, and quartered)

–   2 – 3 tablespoons sugar (depends on the sweetness of the strawberries)

–   ½ teaspoon fresh lemon juice

Whipped Cream:

–   ½ cup cold heavy cream

–   ½ tablespoon sugar

–   ½ teaspoon vanilla extract

Directions:

  1. In a medium mixing bowl, combine the flour, cornstarch, sugar, baking powder, baking soda, and salt. Whisk together.
  2. In another mixing bowl, beat the milk, buttermilk, oil, egg, and vanilla together.
  3. Add the dry ingredients to the wet ingredients and whisk until just incorporated and few lumps remain. Set aside and rest for 30 minutes.
  4. Meanwhile, in small bowl, combine the strawberries, sugar and lemon juice. Set aside at room temperature for 30 minutes.
  5. In a medium mixing bowl, beat the heavy cream with an electronic mixer until it starts to thicken. Add sugar and vanilla extract. Beat until it holds soft peak. Set aside.
  6. Preheat the waffle maker. Fill the waffle maker with the batter and cook according to the manufacturer’s instructions. Cook until golden brown. Serve immediately with the strawberries and whipped cream.

Tips:

  1. For the waffles, I like to keep the cooked one on a cooling rack while making the others. Therefore, the waffles will not turn soggy when they are on a plate.
  2. If you don’t like strawberries, just serve the waffles with syrup and butter.
  3. By macerated strawberries, the sugar and lemon juice will draw out the liquid of the strawberries and create syrup.

Smoked Salmon Avocado Toast. 🥑🍞 When we picked avo Smoked Salmon Avocado Toast. 🥑🍞 When we picked avocados straight from my mother-in-law’s tree and my brother-in-law showed up with a homemade sourdough loaf, avocado toast was the only answer. 

This toast features perfectly charred sourdough piled high with creamy avocado, savory smoked salmon, & a drizzle of aromatic lemon olive oil that ties every bite together. For an extra special touch, add a poached egg & some micro arugula!

Anyone else remember Curry House in LA? I’m still Anyone else remember Curry House in LA? I’m still sad it closed during the COVID era. It used to be one of my favorite comfort food spots. This Ground Chicken and Tofu Curry is my take on their version. I used to order it all the time. It’s comforting without feeling too heavy, w/ savory ground chicken, silky tofu, & rich Japanese curry. My favorite part is the garlic spinach rice. It adds so much flavor & really brings the whole dish together. If you’re looking for a satisfying weeknight meal, definitely give this one a try! 🍛

Visited Oahu in late February. Hawaii is always be Visited Oahu in late February. Hawaii is always beautiful, especially the mountains and beaches. We even saw rainbows 3 times. We love the laid-back island vibe, and the locals are incredibly friendly. During our trip we went on an early morning hike, saw pineapple fields, took on a tour to see the Kualoa mountains, and ate lots of local specialties. 

We didn’t have time to see everything, so we’re definitely looking forward to coming back! 

1. Jungle Expedition Tour (@kualoaranch). It was pouring and cold for the 1st half of the tour, but it was still a lot of fun! I’ll bring a rain poncho next time just in case.

Started off the year babysitting my sister’s dog, Started off the year babysitting my sister’s dog, Truffle. This little cutie is sweet, clingy, and so well-behaved. Even though it rained a lot, we still squeezed in short walks and quick lunch outings together.

He loves crunchy veggies like carrots and Napa cabbage. He is so smart when it comes to snuffle activities. We hid treats in a rolled-up towel and tied it into a knot. He untied and unrolled it in no time! 

Such a fun (and cuddly) way to kick off the year.
2025 is coming to an end! This year has been espec 2025 is coming to an end! This year has been especially full of family time for me. We were lucky to spend so much time with my parents, my mother-in-law, my sister, & my brother-in-law, and I’m truly grateful for all those moments. 

On the blog side, I shared many new recipes that have become personal favorites. The Top 6 includes quite a few sweet and breakfast recipes.
