Crab Cakes

Bryan and I have discovered the love of crab cakes in recent years. We would always order the crab cakes as appretizer when we are in restaurants. The sad thing is that the crab cakes usually come in two, and they are very small. It is hard to be satisfied. And of course, it is pretty pricey. Now, I have found this very easy crab cake recipe, I can make our own during any time of the years. This recipe can make 8 crab cakes, so Bryan and I don’t have to fight for them anymore. Hmmm….. So delicious!

 

Crab Cakes (Adapted from Paula Deen)

8 crab cakes (2 – 3 servings)

Ingredients:

–   1 lb crabmeat (picked free of shells)

–   1/3 cup crushed crackers (Ritz)

–   ½ cup red bell pepper (finely chopped)

–   3 green onions (finely chopped)

–   ½ lemon (juiced)

–   1 egg

–   ¼ cup mayonnaise

–   1 teaspoon Worcestershire sauce

–   ¼ teaspoon garlic powder

–   1 teaspoon dry mustard

–   ½ – 1 teaspoon salt

–   Pinch cayenne pepper

–   ¼ – ½ cup flour

–   ½ cup oil

Directions:

  1. Pat dry the crabmeat with paper towels.
  2. In a large bowl, mix together all ingredients, except for the flour and oil.  Cover the mixture with plastic wrap, and rest it in the fridge for 45 minutes.
  3. Separate the mixture into 8 portions, and shape each portion into a patty. Lightly dust the crab cakes with flour.
  4. In a large skillet over medium heat, heat the oil. When oil is hot, place the crab cakes, in batches, in pan and fry until browned, about 4 – 5 minutes. Carefully flip the crab cakes and fry on the other side until golden brown, about 4 minutes. Serve warm with preferred sauce.

Tips:

  1. Since crabmeat can be really pricey, I used half lump crabmeat, and half claw crabmeat. I am sure that you can use all claw crabmeat if you want.
  2. For the sauce, I just used a store-brought tar tar sauce.

Afternoon tea was on my must-do list for London. W Afternoon tea was on my must-do list for London. We made it to @diamondjubileeteasalon. It was beyond what we imagined. Live piano performance, great service, lots of tea choices & incredibly beautiful sweets, scones & sandwiches. Our favorites were rose eclair, fruit scone, smoked trout sandwich, & ham sandwich. That doesn’t look like a lot of food, but it was! We were crazy stuffed, & I couldn’t even finish my fruit scone. If you’re still hungry, don’t worry, because you can get refills for scones & sandwiches. It was pricey, but worth to do it at least once!

York is a charming little city filled w/ history. York is a charming little city filled w/ history. Romans, Saxons & the Vikings were all here at one point. I love walking through The Shambles. Narrow street w/ timber-framed buildings & cobblestone road. It felt like we went back in time. It resembled Diagon Alley in Harry Potter too!

I think I understand a bit more why British loves pubs. It’s a really comfortable hang out place. The food was incredible! We both got the roast beef sirloin. It came w/ a giant Yorkshire pudding & lots of flavored roasted veggies. Sticky toffee pudding was perfect! There is no better way to start our Great Britain trip.

Moist chocolatey cake rounds filled w/ a slightly tart strawberry buttercream & a hint of rose. They’re fun little treat for Valentine’s Day. Btw, these are freezer friendly too. Keep a few at room temp, & freeze the rest. There’ll be plenty of desserts in the coming month.😉

The food in the picture is sweet glutinous rice dumplings w/ black sesame 落湯糍(糯米糍). The word “糍” sounds similar to “錢”, so the dumplings represent money. Eating them will bring you lots of wealth! 

The dumplings are chewy & gooey like mochi. Coated in black sesame seeds. Right before eating, dip them in sugar. Perfect sweet treat for the new year!

We just can’t get enough of @somisomiicecream! T We just can’t get enough of @somisomiicecream! Their soft serve is creamy, yet not too sweet. Lots of choices too, like ube, matcha, black sesame etc. The taiyaki is crispy on the outside & filled w/ goodness, like Nutella, red bean & custard. My only wish is that they open a store in the San Gabriel Valley, so we don’t have to travel far every time!😆
