We had a laid-back and relaxing Thanksgiving. It was a small dinner with just a few friends. Good company, good food and good time. Cyber Monday though, it was a different story. There were a few things that I have been wanting to buy for a while. So finally on Monday, when all those things that I want were on sale, I couldn’t stop myself! I went on a shopping spree and got myself 4 packages. LOL… I don’t think I have ever bought so many things for myself in 1 day. Bryan also got a couple packages. It’s going to be a sight when all the boxes are piled up in my living room. ?

Now, shall we move on to the dessert? After many long shopping days, we all need to sweeten up with these chocolatey sweet Nutella cupcakes. They are chiffon cupcakes. Whipped egg whites are incorporated into the cake batter. The end result is a light and fluffy, yet moist cake. These are made with cocoa powder and a few big spoonful of Nutella. They taste rich and chocolatey like a brownie with a hint of hazelnut.

To make them even better, I pair the cupcakes with a Nutella buttercream. Oh my! That smooth frosting with the strong punch of Nutella flavor is exactly what the cupcakes need. It boosts the Nutella flavor and add a little extra butteriness! And not to forget the Ferrero Rocher chocolate! How can any chocolate hazelnut cupcakes go without Ferrero Rocher chocolates?

Chocolate Nutella Chiffon Cupcakes

Ingredients
 

Cupcakes:

  • 65 grams Hot water
  • 30 grams cocoa powder
  • 3 heaping tablespoons Nutella
  • 1 teaspoon vanilla extract
  • 4 large eggs, (whites and yolks separated)
  • 95 grams caster sugar, (divided into 30 grams and 65 grams)
  • ½ teaspoon salt
  • 50 grams canola oil or vegetable oil
  • 50 grams whole milk
  • 90 grams all-purpose flour, (sifted)
  • 10 grams corn flour or starch
  • ½ teaspoon cream of tartar

Nutella Buttercream:

  • 1 cup unsalted butter, (at room temperature)
  • ½ – ¾ cup powdered sugar
  • ½ cup Nutella
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 2 tablespoons heavy cream

Instructions
 

  • Preheat the oven to 325˚F (165˚C). Line 2 muffin pans with 14 – 16 paper liners.
  • In small heatproof bowl, add the cocoa powder. Pour in the hot water. Add the Nutella. Stir and mix until smooth. Add vanilla extract and mix again. Set aside.
  • In a large mixing bowl, whisk together the egg yolks, 30g caster sugar and salt. Add the oil and milk, and mix again. Pour in the cocoa mixture and whisk until everything is combined. Sift in both flours and mix well with a spatula.
  • In a large mixing bowl with an electric mixer fitted with a whisk attachment, add the egg whites. Beat over medium speed until big bubbles appear, add the cream of tartar. Continue to beat until soft peaks form. Add the 65g caster sugar gradually and beat until stiff peaks form. Reduce the mixer speed to lowest and beat for another 10 seconds to minimize air bubbles in the cakes.
  • Mix 1/3 of the egg whites to the chocolate Nutella mixture to loosen up. Fold in the rest of the whites gently until just combined.
  • Divide the batter evenly among the cupcake liners, about ¾ filled. Gently tap the muffin pans on a counter top to release air bubbles in the batter.
  • Bake in the oven for 22 – 25 minutes. Test the cupcakes with a toothpick for doneness. The toothpick should come out clean. If you press the cake lightly with your finger, the cake should spring back. Remove the cupcakes from oven. Transfer the cupcakes to a cooling rack and cool completely.
  • For the buttercream, in a large mixing bowl with an electric mixer fitted with a paddle attachment, beat the butter until light and fluffy. Add ½ cup sugar and mix on low speed until combined. Taste and add more sugar if desired. Add the Nutella and mix well over the medium speed. Scrape the bowl if needed. Add the vanilla extract and salt. Whip for 30 more seconds. Add the whipping cream and beat for 1 more minutes. Frost and decorate the cupcakes. Right before serving, top each cupcake with a Ferrero Rocher chocolate.

Notes

  1. The cake is really light. It doesn’t need too much frosting. The frosting recipe above is for small amount of frosting. If you prefer more frosting, make extra.
  2. For storage, keep the cupcakes in an airtight container. If serving the same day, just leave them at room temperature. If using later, store them in the fridge. Take them out to room temperature for 15 minutes before serving. They last 5 days in the fridge.
