Baked Madras Curry French Fries | The Missing Lokness

French fries are something I really enjoy! Curly fries, skinny fries, steak fries, battered fries, Belgian fries, McDonald’s fries and In-N-Out fries. I love them all! But we all know French fries are not really healthy, which makes me sad. But there is one type of fries that is much healthier because they cooked in very little amount of oil. That would be oven fries. I have been wanting to try them for a while. Finally, I got my courage and the fries came out awesome. The secret of making crispy fries is soaking them in hot water for 30 minutes to get rid of some of the starch. They were crispy and golden brown! To make them extra special, I tossed in Madras curry powder. Nice little kick! Enjoy these oven fries!

Right now, I am getting back to take care of Bryan. He has a cold. I think it has to do with the weather. One day was hot and then the next day was cold. I thought the cold/flu season has been long over. Who knows Bryan would get sick now? Let’s hope the cold bug will stay from me.

Baked Madras Curry French Fries

2 servings

Ingredients:

–   2 russet potatoes (about 12 ounces)

–   4 tablespoons vegetable, canola or peanut oil

–   1 teaspoon Madras curry powder

–   ½ teaspoon kosher salt

–   ¼ teaspoon ground black pepper

–   ¼ teaspoon garlic powder

Directions:

  1. Peel the potatoes and cut into ½-inch long strips.
  2. In a large mixing bowl, add the potatoes and cover with hot water. Soak for 30 minutes.
  3. Preheat oven to 475˚F (245˚C).
  4. In a large heavy, rimmed baking sheet, add 3 tablespoons oil and spread evenly. Set aside.
  5. Drain the potatoes and pat them dry with paper towels or kitchen towels. Wipes dry the empty mixing bowl. Return the potatoes to the bowl. Add the curry powder, salt, black pepper and garlic powder. Toss well. Transfer the potatoes to the prepared baking sheet and arrange them in a single layer. Cover with foil tightly and bake in the oven for 5 minutes. Remove the foil and continue to bake until the bottoms of the potatoes are slightly golden brown, about 12 – 15 minutes. Flip the potatoes with a metal spatula or tongs and keep them in a single layer. Return to oven and bake until crisp and golden brown, about 10 – 15 minutes.
  6. Transfer the fries to a paper-towel lined plate and soak up some of the oil. Season with additional salt to your own taste. Serve warm.

Tips:

  1. When soaking potatoes, use hot water, not boiling water.
  2. Some fries may finish a few minutes earlier than others. Take the finished ones out before they got burned.
