We are back home. We had fun in Vegas, but very tiring! 4 days in Vegas for CES required at least 2 days to recover. For the whole weekend, we pretty much sat on the couch, watched TV and played video games. That is our kind of relaxing. 🙂 As we ate and ate tons of good and fatty food during the trip, I know I need to cook some healthier food. While brainstorming, I discovered Chobani #MadeWithChobani project. Probiotics in yogurt help with digestive system, which would be something we totally need. So I have decided to make something with Chobani plain Greek yogurt.

How about some mushrooms and yogurt dip? Mushrooms are one of my favorite food. That earthly flavors just can’t be found in anything else. This dish is simple and healthy. Sauteed and caramelized some crimini mushrooms, then served them with a tangy, flavorful and creamy curry yogurt dip. The rich mushroom flavors paired really well with the yogurt dip. They complimented each other greatly. In fact, the yogurt dip is great with any steamed or slightly sauteed vegetables. I guarantee your vegetables won’t be bland or boring any more. Enjoy!

Sauteed Crimini Mushrooms with Curry Yogurt Dip

2 servings

Ingredients:

–   16 ounces crimini mushrooms (also called baby bella or baby portobello)

–   2 tablespoons extra virgin olive oil

–   1 tablespoon unsalted butter or margarine

–   2 teaspoons garlic (minced)

–   salt

Curry Yogurt Dip:

–   ½ cup Chobani non-fat plain Greek yogurt

–   ½ teaspoon, plus 1/8 teaspoon curry powder

–   ¼ teaspoon garlic (minced)

–   dash of smoked paprika

–   salt

Directions:

  1. For the mushrooms, rub and wipe off any dirt with paper towels. Trim the stems, so the stems line up with the bottom of the mushrooms.
  2. In a small bowl, add the yogurt, curry powder, garlic and paprika. Stir to combine. Season with salt to your own taste. Set aside.
  3. In a large pan over high heat, add the extra virgin olive oil. Once the oil is hot, add the mushroom with the stem side down. Do not move them around. Cook until the bottom is caramelized, about 3 minutes. Turn over and continue to cook until caramelized, about 3 – 4 more minutes. Add butter and garlic. Toss the mushroom around until covered with butter. Season with salt. Transfer to a serving plate. Serve immediately with the curry yogurt dip.

Tips:

  1. Crimini mushrooms have a lot more flavors than button mushrooms, so do not substitute.
  2. Add more garlic or curry powder depends on your liking.

    I’m a big fan of mushrooms (even raw mushrooms!). Love the curry yogurt dip idea! I have yet to see anything like that. I can’t wait to try it!

    I hear you – after traveling (particularly to places like Vegas with such amazing food), it’s good to come home, cook, and eat a little leaner. I love using yogurt in place of sour cream and such these days. Pairing the yogurt with curry is such a great idea! This is a great appetizer/starter/side dish!

    I love mushrooms and the yogurt dipping is a great way to serve them! I love the curry and garlic flavor in the dipping sauce, and I think it will go great with all sorts of roasted veggies. Can’t wait to try it out!

We’re back at decorating Rose Parade floats this We’re back at decorating Rose Parade floats this year!🌹 Fluffing and gluing so many carnations for the Honda float. This time, we decided to come on a later date, & the vibe was totally different from last year. There were news crews, tons of volunteers, adorable rescue dogs (they’ll be on the Pasadena Humane float 🐾), & even Gayle King! Our legs & backs are aching right now, but honestly? I wouldn’t trade it for anything. Loved every minute of it! ❤️

I grew up eating them in Hong Kong. They’re very common in local bakeries. So simple, but taste the BEST! Have you had these before?

Yesterday, we went to Disneyland and Disney Califo Yesterday, we went to Disneyland and Disney California Adventure. Festive, & luckily, it wasn’t too crowded. I went in with a long list of foods to try, but by 4 PM, we were already stuffed! Here are some of our favorites:

1. Mickey Gingerbread - The most popular holiday treat! We’ve had this before & loved it just as much this time around. It’s soft & chewy with ginger and warm spices. And let’s be honest - they’re just way too cute! Quick tip: I placed a mobile-order through Jolly Holiday at 7am when the windows opened. Yes, I ordered it before arriving at Disneyland. It can sold out quickly, especially on a busy day. These can sell out fast, especially on busy days. You might find them at Market House too, but there’s no mobile ordering option there. (From Jolly Holiday)
2. Waffle Cristo - A twist on the classic Monte Cristo. Ham, turkey, & Swiss cheese on crispy waffles. Adding a touch of strawberry jam & maple syrup made for an amazing sweet & savory combo. Definitely getting this again next time. (From Royal Street Veranda)
3. Mickey-Shaped Beignets - 1st time trying these. Light & fresh! (From Mint Julep Bar)
4. Lobster Nachos - The nachos were flavorful as always, though I wouldn’t have minded a bit more sauce this time. Fair warning: the jalapeños brought some serious heat!
5. 2319 - This fruity coconutty drink is non-alcoholic. So refreshing! Loved it! (From Lamplight Lounge in DCA)
6. Churro - Hot & fresh! Always a must! (From churro carts)
7. Cold Brew Black Caf - Tasty! It kind of reminds me of tiramisu. If you’re in Galaxy’s Edge area, definitely check it out. (From Docking Bay 7 Food and Cargo)
8. Dole Whip - No Disneyland trip is complete without this! I always go for the classic pineapple flavor. Tangy, refreshing, & never disappoints. (From The Tropical Hideaway)
