The Easiest Breakfast Tacos

Ingredients

  • 10 - 12 4-inch corn tortillas
  • 6 fully cooked pork sausage links
  • 1 tablespoon unsalted butter
  • 4 large eggs (beaten)
  • 5 ounces queso fresco (Mexican fresh cheese)
  • Red taco sauce
  • Hot sauce (optional)

Instructions

  • Stack 6 tortillas on top each and wrap with of a paper towel. Add two drops of water on the paper towel. Repeat with the other 6 tortillas. Set aside.
  • In a medium pot over high heat, add sausage links. Cover with lid and cook until nicely browned on all sides. Transfer to a plate lined with paper towels. Cut the sausage in half lengthwise.
  • Meanwhile, in medium non-stick skillet over medium heat, melt 1 tablespoon unsalted butter. Season the beaten eggs with salt. Once the butter is bubbling, add eggs. When the eggs start to set, run a spatula through the middle of the eggs to create soft curds. Repeat until the eggs are just cooked through. Transfer to a plate.
  • Heat each pack of tortillas in the microwave for about 35 seconds or until hot. Transfer the hot tortillas to a tortilla warmer or a plate with an aluminum-foil-cover.
  • It’s best to let everyone assemble their own tacos when serving. Place about 1 tablespoon scrambled egg on a tortilla. Add half of a sausage and 1½ teaspoons of queso fresco. Top with desired amount of taco sauce and/or hot sauce.

Notes

  1. My favorite corn tortilla brand is Guerrero. I used 4-inch ones, but you can use other sizes, but make sure they are corn tortilla. 
  2. The sausage links that I used is from Jimmy Dean
  3. Queso fresco (Mexican fresh cheese) can be found in regular grocery store along with shredded cheese. Once opened, keep it in an air-tight container for about 2 weeks in the fridge.
  4. There are two combos of hot sauce we like. One is with La Victoria red taco sauce and a few drops of Tapatio. They can both be found in supermarket. The other one is with Hot Ones hot sauce, Los Calientes. Buy this online on their website
  5. This can also be done with bacon. Line a baking sheet with foil. Lay about 8 - 9 bacons in a single layer. Put in a cold oven. Turn the heat to 425˚F (220˚C). Cook for 20 - 25 minutes until crispy. (20 mins for a more chewy bacon/25 mins for a crisper bacon). Transfer the bacons to a plate lined with paper towels. Use more paper towels to soak up the grease from bacon. Cut the bacons in half and serve.
